Ingredients used in Bendakaya Vankaya Pulusu
• Oil - as required.
• Ladys finger - 10 numbers.
• Brinjal - 4 numbers.
• Mustard seeds - 1 tea spoon.
• Garlic - 7 cloves.
• Dry red chillies - 4 numbers.
• Onions ( chopped ) - 1 numbers.
• Salt - to taste.
• Curry leaves - 2 spring.
• Turmeric powder - 1 tea spoon.
• Tomatoes ( chopped ) - 2 numbers.
• Tamarind pulp - 1 cup.
• Red chili powder - 1 tea spoon.
• Water - as required.
• Coconut milk - 1 cup.
• Coriander leaves - 1 bunch.
Method:
  • Heat oil in a pan, add ladys fingers, fry them and keep aside.
  • In a same pan fry brinjal and keep aside.
  • Heat a pan add oil, mustard seeds, garlic, dry red chillies, chopped onion, salt, curry leaves, turmeric powder and sauté it till they turn light brown in color.
  • Add chopped tomatoes and cook it well.
  • Then add tamarind pulp, red chili powder, water and cook it with closed lid.
  • Now add fried brinjal, ladys finger and cook it.
  • At last add coconut milk, coriander leaves and switch off the flame.

Bendakaya Vankaya Pulusu is now ready to serve.
